Chicken Cordon Bleu On A Budget

I have always loved this recipe growing up. However, I never truly appreciated how delicious it was until I worked my first job in High School. As a waitress in a retirement center where the residents dined every evening, Cordon Bleu was frequently on the menu. Many times after our shifts we all would eat a meal ourselves in the staff room before heading home. I figured, hey I like Chicken Cordon Bleu. Why not try this recipe? Nope, nope, and more nope! Hard pass! The chicken was never cooked right, the cheese not cheesy enough, and the breading not crispy at all.

This recipe is not fancy and the chicken is not tightly wrapped like many. However I kid you not, the flavor is there and it is delicious! Give this one a try and let me know in the comments!

Chicken Cordon Bleu

Want to impress someone with a truly simple and delicious meal that they will call fancy?! This Cordon Bleu is ready to take center stage at your next dinner. It's moist, juicy, buttery, a little salty, and wrapped in a crispy crust. A perfect combination!

Equipment

  • 1 8x8 Pyrex or other oven safe dish
  • 2 bowls
  • 1 Cutting board
  • 1 Knife

Ingredients
  

  • 2 to 4 Chicken breasts (2-4 breasts depending on the size)
  • 8 Ham slices
  • 4 to 8 Slices of cheddar cheese
  • 1/2 cup Butter
  • 1 cup Breadcrumbs
  • Season-All Salt

Instructions
 

  • Trim the excess fat off of each chicken breast.
  • Cut each chicken breast in half horizontally to make them not as thick. This will turn 2 chicken breasts into 4 pieces when it comes time to wrap them.
  • In your work area, lay out the sliced cheese, ham, and two bowls.
  • Fill one of the bowls with melted butter and the other with breadcrumbs.
  • Take one of the pieces of chicken and wrap it around the cheese and ham.
  • Roll the entire bundle in the melted butter and then in the breadcrumbs.
  • Place it in the dish and repeat these steps until all 4 pieces of chicken are prepared.
  • Sprinkle Season-All salt over all of the chicken bundles.
  • Place the dish in the oven and cook it at 400 degrees for 30-40 minutes, or until the chicken reaches an internal temperature of 165 degrees.

Notes

This recipe can be made with as many chicken breasts as you would like. Simply increase the amount of chicken, cheese, ham, butter, and breadcrumbs.
